The fall/winter menu features new lunch, dinner, dessert and wine selections, each highlighting the season’s best flavors and textures, including: Snoqualmie Valley Heirloom Potato Salad with Savoy Cabbage, Full Circle Farms Beets and Black Truffle Vinaigrette; Makah Tribe Line Caught Steelhead Salmon with Cipollini Onions, Granny Smith Apples, Garden Radish and Creamed Spinach; Pleasant View Farms Foie Gras, Huckleberry Marshmallow, Graham Cracker and Garnet Yams; Grimaud Farm Guinea Hen with Licorice Scented Bluebird Farm Farro, Chanterelles and Italian Prunes; and Rhubarb Ice Cream with Garden Basil, Holmquist Farm Hazelnuts.
At his intimate 30-seat farm-to-table restaurant in Seattle, Executive Chef Mark Bodinet, along with Breiman and their culinary team, showcases culinary excellence with a focus and commitment to using local ingredients. In addition to many herbs and vegetables grown in Cedarbrook’s onsite Chef’s garden and mushroom patch, Copperleaf sources most of its menu from within 100 miles of the restaurant.
